From the classic age, humans were able to make statues true to appearance, yet painted art hardly improved between ancient Egypt to the middle ages. Why did it take so long for artists to learn to make portraits true to form?

It seems to me that this question may be based on a false premise. I'm not sure where you got the idea that portraiture "hardly improved" since the days of the pharaohs. Perhaps the finest examples of ancient painting were created in Egypt during the Roman period. It was a trend in the first few centuries AD to cover the sarcofagi of mummies with mummy portraits, which offer strikingly realistic depictions of the deceased.
