Could I get secondary source recommendations regarding both the 11th Century expansion of the Normans into England and Italy (including their role in the First Crusade) and the relationship between the Latin Church and non-Latin churches that sided with it during the Great Schism?

The idea that I have in mind is to investigate whether or not there is a relationship between Norman expansion and both imposition of Latin Church practices on non-Latin Catholic churches (such as the Maronites) and Romanization of non-Roman components of the Latin Church (in this case, I would like to specifically examine the way that the Normans dealt with the English church hierarchy and the differences between the Anglo-Saxon church practices and the Anglo-Norman church practices).

I'm very late, but you might be interested John Julius Norwich's very extensive history of Sicily in two works, one chronicling the Norman Conquest and another on the actual the rule. Both works have recently been published together as a single work.
