Just a heads up, but at 500 years of rule, we don't really use the term "Andalusian occupation". I'd say the best book to read as an introduction is Watt and Cachia's A History of Islamic Spain. It's a survey work so it doesn't bog the reader down with details but is still comprehensive enough to give you a good bird's eye view. A fast reader can get through it in a day or two.
