In the film Tombstone, Morgan Earp is depicted snacking on a plate of leftover stir-fried noodles and broccoli. Would such a dish have been available at an Arizona saloon in the 1880s?

Remotely possible, but seems unlikely. Broccoli could have been grown in a local garden (as occurred in California around this time), but was not commercially grown and distributed in the US until the 1920's.
