Do we know anything about the Samnites cavalry capabilities during the three wars they fought with Rome?

Searching through the sources, there's just not a lot of information about this. To offer some contrast, Livy mentions Numidian cavalry many times, including that they are light and maneuverable, and ultimately integrated into the Roman forces because of these particular characteristics.

Our conclusion must be that Samnite cavalry was "standard" with no noteworthy differences to Roman or other Italic horsemen of their time.
