If languages like English and German are derived from Latin, why are there different languages? Why don't/didn't people just speak Latin?

Your premise is incorrect. English and German aren’t derived from Latin. Both languages are influenced somewhat by Latin, and all three languages descend from a common ancestor language called Proto Indo-European. If languages make up a family, it’s more accurate to call English and German cousins of Latin, not descendants.

Note that the Romance languages are commonly described as direct descendants of Latin; this family of languages include French, Spanish, Portuguese, and many others, but not English or German.
