The position one assumes looks like it requires a lot of trust and that the person giving them the knighthood could easily execute them as well.
I don't think you can lop someone's head off by mistake, even when trying to decapitate criminals during executions they would need a few swings, hence the guillotine being invented when the need for mass executions came up.
