I'm very interested in learning more about the ins and outs of sailing culture in the 13th and 14th and generally that period of medieval history, but not sure where to ask for good reading material on the subject.
Dr. Emily Sohmer-Tai is an excellent source for piracy in the medieval Mediterranean, but she hasn't published a book, mostly articles.
Otherwise, there are some good books out there.
More explicitly about sailing and warfare at sea than about piracy:
Sea power in the medieval Mediterranean : the Catalan-Aragonese fleet in the war of the Sicilian Vespers by Lawrence Mott.
You might also check out, War at Sea in the Middle Ages and Renaissance edited by Unger and Hattendorf, which might generally be better on the subject in a broader sense.
It's a lot of articles for medieval piracy in the Mediterranean these days though and it's a great deal of legal/institutional history and less so much the type of stuff that more "general interest" readers would find as interesting.
For primary sources, there are translations of a couple of the Quatre Grans Croniques of Catalonia that might be worth checking out.
E.G.: http://www.yorku.ca/inpar/muntaner_goodenough.pdf
They're also available in Catalan if you're comfortable with that.
There is also a translation of selections of Caffaro's chronicle of Genoa that contain significant passages on naval warfare.
