How did one become a torturer in the Middle Ages?

If you were a ruler during the Middle Ages, where would you look to find a torturer? Among your own guards? The executioner?

I realize that there was probably a lot of variation, given that "Middle Ages" covers a LOT of years. I'm just trying to get a sense of what kind of background a torturer might have.

Was being executioner/headman in medival ages fulltime job? What were the usual duties of someone who held such position apart from performing executions?
