Graham Webster's "The Roman Imperial Army" goes more in-depth. Pat Southern is a good author to look at too.

If you want something even more in-depth, that's going to vary based on more specific topics. Social aspects, logistics, economics, etc.

Avoid anything written by Stephen Dando-Collins.
