I’m interested in learning more about the various Turkic khanates, and was wondering if anybody could recommend some good books on the topic.
For a solid read/introduction, try Carter Vaughn Findley's The Turks in World History.

I would recommend Rene Groussets The Empire of the Steppes: A History of Central Asia, its quite dated but overall still the go to source for a complete history of the Steppes various Khanates etc. There are several chapters about the Gokturks alone.

"History of the Muslim World Since 1260" by Vernon O. Egger has good overviews over each of the major Turkic Khanate along with suggestions for further reading on the subject.
