There are a lot of good ones out there. I would recommend these three as a good starting point. They tend to focus on the cold war period of US history.
'Red Heat: Conspiracy, Cold War and Murder in the Carribbean' by Alex Von Tunzelmann- Deals with the Carribbean region through the lens of the Cold War. US support for regimes such as Papa Doc Duvalier of Haiti and The Trujillo regime in the Dominican Republic, and opposition to regimes like Castro's Cuba.
'The Brothers: John Foster Dulles, Allen Dulles and Their Secret World War' by Stephen Kinzer- Discusses the background of the brothers John Foster and Allen Dulles, and their actions as Secretary of State (John Foster) and head of the CIA (Allen). Gets into fine details on 5 governments/leaders they either deposed or actively sought to depose. Arbenz in Guatemala, Mossadegh in Iran, Lumumba in the Congo, Castro in Cuba, Sukarno in Indonesia.
'Killing Hope: US and CIA Interventions Since World War II' by William Blum - Details US interventions throughout the world. China, The Phillipines, Greece, Korea, Albania, Germany, Iran, Costa Rica, Syria, Vietnam, Laos, Haiti... you name it.
