Yes. Many Japanese were employed (or bought) as mercenaries in Southeast Asia where the Dutch and English were duking it out with the Spanish and Portuguese. See this thread.

And I do remember there are documents attesting to Japanese individuals employed as armed guards in the Americas at the same time period.

I don't remember reading any making it to the battlefield in Europe though.
