Good book about Minoan civilization?

Preferably in-depth one!

I recommend beginning with J. Lesley Fitton's Minoans, which is a readable and reasonably comprehensive overview of Minoan history, archaeology, and society. For a more in-depth look at the Minoans (and Mycenaeans), try The Oxford Handbook of the Bronze Age Aegean edited by Eric Cline and The Cambridge Companion to the Aegean Bronze Age edited by Cynthia Shelmerdine.

For Minoan art and architecture, see Aegean Art and Architecture by Preziosi and Hitchcock, Architecture of Minoan Crete: Constructing Identity in the Aegean Bronze Age by John McEnroe, and Introduction to Aegean Art by Philip Betancourt. Higgins' Minoan and Mycenaean Art and The Arts in Prehistoric Greece by Sinclair Hood are a bit dated but still very useful works.

For a broader overview of the eastern Mediterranean in the Middle and Late Bronze Age, I highly recommend The Making of the Middle Sea: A History of the Mediterranean from the Beginning to the Emergence of the Classical World by Cyprian Broodbank and Beyond Babylon: Art, Trade, and Diplomacy in the Second Millennium B.C. (available online for free).

Finally, Jeremy Rutter's Aegean Prehistoric Archaeology website is extremely useful.
