What was the average experience of a black family in America on a road trip in the 1950s? Were there issues with a lack of food/water or not having a place to sleep due to white business owners denying them service?

Are you familiar with the Negro Motorist Green Book? It was a 1936-1966 travel guide that listed Negro-friendly hotels, restaurants, bars, gas stations, etc.

The New York Public Library has been digitizing them and making them available. Apparently you can map out a specific route in the past. Here it is: http://publicdomain.nypl.org/greenbook-map/
