What was the initial phase of a classical Greek colony like?

I can find a lot on the "why" and "therefore"s of when Greek metropoles sent out colonists, but not much on the "hows". Like- how many settlers would be sent to start one off? How would they get there? What did they bring (supplies, etc) and where did it come from? Are there surviving accounts?

There is practically no concrete information to answer your questions, though we know a little more detail about Classical Greek overseas settlement (which was more organised and more overtly expansionist) than we do about the Archaic Greek migration period that is traditionally called the "Age of Colonization". You might enjoy my older post on Greek overseas settlement here, which mostly covers the reasons why looking at this process as a deliberate state-controlled colonization effort is pretty far off the mark. I also wrote about the extent to which Greek "colonies" remained tied to their home states here.

We have a few surviving versions of foundation stories that go into some detail, but they still can't answer your questions, because those are not the aspects that interest them. Foundation stories typically served to assert the new settlement's piety and Greekness. They were interested in why a particular place was chosen (usually becuase of a directive from the Oracle at Delphi) and how the first settlers overcame setbacks and adversity to eventually flourish. They were not interested in technical matters unless it could help to underscore the settlement's claim to a share in the common customs and traditions of the Greeks.
