I suppose there's always more about the Western Europe, but if there's something credible and well-explained about the Eastern Europe, I'd greatly appreciate it!
Thank you in advance, and have a great day!
Early Medieval Europe (Yale lecture series)
The Germans (Charlemagne and the Saxons)
For Eastern Europe during this time most documentaries would be centered around Constantinople and the Byzantine Empire. Such as their wars against the Avars, the Bulgars and the Kievan Rus. Most of what I could find though focuses more on early Constantinople and it's architecture. Other events you can search for from this era would be the Anglo-saxon arrival in England, the Carolingians, the Islamic Conquests and of course the Viking invasions.
For a light touch, Terry Jones (he of Monty Python) did a few documentaries on Medieval life and such. Also barbarians. It had been his interest before he got caught up in show business.
