So I have noticed that in previous periods of history (mediaeval, Victorian etc) they seem to drink alcohol more regularly. Would they have constantly had hangovers and headaches? Thanks !

Hangovers and headaches would have been preferred to the alternative, dysentery and death. Water Treatment plants are a recent invention, and for a large part of history the stream that you drank from was also the sewer that your waste went into. Drinking the water was a good way to catch a disease. Luckily alcohol destroys most germs, so alcoholic beverages were safer to drink than water was.
