I'm aware that the Reconquista was a very religiously motivated period of time which is why I'm curious how it affected the religious policies concerning minorities in Christian lands: would Muslims and Jews be expelled completely, forced to convert, live under extra restrictions, something like that?
Hey,
I can't really talk about earlier medieval times for this, but regarding the conversions of *moriscos* in the early 16th century you may be interested in this earlier answer I wrote on the topic.
As a short intro to that post: Jews and Muslims had lived and continued to live in Christian Iberian states before and esp. after the 12th century, and continued to practice their religions - those Muslims were then called *mudejares* by the Christians. While there were increasingly progroms against Jewish people by the 13th century, the main changes you mention came in the late 15th c. Only then was the last Iberia Muslim state of Granada conquered, leading to the forced expulsion of all Iberian Jews from 1492 onwards. The many remaining Muslims were made to convert a few years later, with many emigrating over the following decades, and with the expulsion of all moriscos (as they became known) coming in 1609. I go into more detail on these developments in early modern times in that post - hope this helps!
