Why did people stop using Latin? The Roman Empire ruled many countries and a lot of people understood Latin.

The real answer is that they did not. In Europe today there are close to 200 million people who speak Neo-Latin (aka Romance) languages, in addition to the well over half billion in the rest of the world.
