When did Lobster go from a poor man's food to rich man's food?

Also, while not explicitly historical in scope, acclaimed novelist David Foster Wallace wrote an excellent essay titled "Consider the Lobster" that not only touches on the history of the animal's consumption, but also how that history connects to the modern world through a popular lobster festival held in Maine every year.
