Not trying to discourage other contributions but here is a thread from a month or so ago dealing with Everest specifically. u/caitrona and u/Bacarruda give some pretty good detail on why (Himalayan) mountains might not have been tackled by local populations. Hopefully some others can come along and potentially discuss other cases.
