How did the architects of the past design buildings without advanced maths or modern techniques? How did they know that what they were building wouldn't collapse? I'm referring in particular to big structures like churches or temples.

They most certainly did have advanced math! The Mayan, for example were able to calculate auspicious dates up to 2012, over a thousand two hundred years into the future! The calculations are amazingly accurate!And (as just one example) the Romans had concrete, including marine concrete which sets in the ocean! This marine concrete is something that was lost to us until recently! (An advanced technique.) The Romans also had a lighter kind of concrete using tufa (volcanic rock) for domes!
