Is there a particular period of Arab history that you’re interested in (broadly speaking)? I can more easily recommend a single volume for, say, modern Arab history (I would recommend The Arabs: A History by Eugene Rogan in this case), than I could any single volume that would cover all of Arab history.

A History of the Arab Peoples by Hourani is supposed to be the classic attempt to do so. I have to admit I’ve failed at every effort I’ve made to finish it because I always got a bit bored.
