It seems to me like that would be the quickest route for aircraft to take to reach London, but didn’t the British fleet control the Channel? What other locations could aircraft be launched from?
Yes, the Germans did launch air raids across the English Channel. The vast majority of the Battle of Britain, from the raids on shipping in the Channel that opened it, through the attempts to suppress the British air defence network, and finally the attacks on Britain's industrial cities, was fought using aircraft operating from bases in France. Beyond 1940-1, German attacks from France continued, albeit at a lower intensity. While the RN controlled the Channel, they could only close it to German shipping; aircraft could fly over the effective ceiling of the fleet's AA fire, that AA fire could not really do enough damage to prevent the Luftwaffe flying over and strikes on British shipping made it risky to commit too many ships to the area in any case. German air raids were also launched against Britain from bases in Germany (against targets on the East Coast), Denmark and Norway. However, these bases were too far from Britain for fighters to escort the bombers to the target, and so losses were heavy on most of these raids. As such, very few raids were launched from them compared to those launched from France.
