Why does it seem like wheat is universally prized compared to other grains and seen as food of the wealthy?

Wheat is generally less hardy than barley or rye and requires more processing to consume than barley (which can be cooked similar to rice without needing to mill, ground, crack, or pre-boil it). Barley is more nutritious and intensely flavorful but has less gluten, resulting in a denser and less appetizing bread than the fluffy white loaves you can get from high quality flour.
