Hello all. I am making a "alternative historical account" book set around 1492. Need some help with reference material.

I am going to write it in the perspective of a spanish friar of an undetermined order. The problem is I have no idea; what life was like for a Spanish friar in 1492, or what it was like to cross the ocean to the new world, and I also do not know how they spoke/wrote (latin)(old spanish). I speak Spanish but, am not sure if Spanish from that era is so far removed from modern Spanish, making it illegible to the modern reader. Any reading material or references would be highly appreciated. (idk if this is the correct forum for this.)

Something along this style is what I would like to end up with. Everything by hand. Ive already made the book out of leather and canvas pages.
