Originally interested in just the Americans, but what about the rest of the Allies? Did the French soldiers just say ok, VE Day, let’s start walking home.

Was the points system announced the day after VE Day? Was there a staff officer in charge of the demob? Who was it?
I’m not sure about other nations, but in the US Marines and Army, a points system was established, where if you had a certain amount of points you could go home. If you did not have enough points, you had to keep on serving. Eugene Sledge, a US Marine who started his tour on Peleliu and fought all the way to Okinawa, still did not have enough points to go home and had to serve for some time in China.
