I think of fire and boats at the most basic levels, but the bow and arrow is a fairly complex device to have emerged in completely different places.
I guess I'm curious about what the most complex inventions were that sprang up independently of one another.

That's an accepted term. Academics talk about diffusion vs independent invention.
For instance, in the book The Origins of Iron Metallurgy in Africa edited by Hamady Bocum, several chapters speak of "independent invention" "independent origins" and "independent centers of origin" for processes of smelting iron from ore, and for forging ingots into usable tools and objects.
Edit: The Archaeology Fantasies podcast presented an episode about this topic from an anthropological perspective, looking at cultural traits like art, clothing, religion rather than focusing specifically on technologies.
Not only was bow and arrow technology invented independently throughout the world, it was independently invented in numerous locations over several thousand years just in North America. This old post of mine goes into this subject a bit.
