We're currently in the process of revising the World War I booklist, partly to fill in the gap you've noticed. While I'm not familiar enough with the literature to recommend books that take a wider view of the war in the air, I do have to recommend David Hobbs' The Royal Navy's Air Service in the Great War. It's an excellent overview of the work of the RNAS during the war, and highly readable for newcomers. It's very detailed, covering every aspect of the operations of the RNAS, both on land and at sea. It's well worth a read if the topic interests you, though unfortunately it is very much focused on the RN's operations.
