It is well known that Heinrich Himmler was probably the most stringent eugenist of the entire Nazi Party, even more so than Hitler himself. His concept of what constituted a true Aryan was extremely austere and made no exceptions, and Aryan features (including appearance) were an important factor for entering the SS.
In this context, if the Nazis won the war, what was his plan for non-Aryan races that hadn't been targeted yet, including allied ones, such as Japanese and Bulgarian? Are there any documents or diaries showing his plans for that situation?
Generalplan Ost is the only real surviving document which gives an idea of what the Nazis plans were after the "final victory" though this only applies to Eastern/Central European Slavs and not any of the other ethnic groups you mention. The general plan was to depopulate the east from Poland eastwards via deportations, forced starvation tactics and the use of "einsatzgruppen" (death squads) thereby providing "Lebensraum" (Living space) for German settlers who would replace the existing populations. Generalplan Ost was never found in totality as the regime destroyed the documentation before the end of the war but the general thrust of the plan was reconstructed from memos and other related documentation found after the war.
