It's twenty years old so it might be a bit outdated given how much Irish archaeology has expanded in the last two decades, but John Waddell's Prehistoric Archaeology of Ireland still seems to be the most thorough overview of Irish prehistory from earliest times to the end of the Iron Age. As u/Imgig said, The prehistoric archaeology of Ireland is still a great overview used by undergraduates studying Irish archaeology to this day. A more friendly read, however, is James Mallory's Origins of the Irish which is a bit more "User friendly* and brings in linguistics, geography, and a little history to provide a more rounded account. It is less academically written but Mallory is an academic himself
