French Visual Culture and the Making of Medieval Theater by Laura Weigert is an excellent scholarly perspective on the intersections between visual art and performance that considers extant sources from the period that you're interested in. Weigart takes methodologies from art history and performance studies to examine regional and civic events that became contributors to the theatrical struggle to define what it meant to be French (and what, exactly, constituted the French theatre) at the dawn of the modern era. Though Weigart does not directly address the Hundred Years War, some of the events captured in the works that she studies [in the earlier chapters of her book] were tangentially related.
