If you're talking Medieval Era, that covers anything from just after the Fall of Western Rome when ships were comparatively pretty coastal, and the North Sea was considered a very hazardous crossing, to the 15th Century that ended with transatlantic voyages on much larger and more sophisticated vessels. The food, accommodation, weapons, distance and naval tactics were entirely different.
