I'm not going to recommend any single-volume general surveys because, to be frank, there are no good ones. However, I'm more than happy to recommend the six-volume History of Imperial China series, which covers everything from the foundation of the Qin in 221 BCE to the fall of the Qing in 1912. As for anything beyond that, Jonathan Spence's The Search for Modern China (which starts with the Qing) still generally holds up.

As for the Three Kingdoms in particular, while this is not my specific area, Volume 2 of the Cambridge History of China is now finally out, and that covers 220-589 (and thus the Three Kingdoms period), while Mark Edward Lewis' China Between Empires : The Northern and Southern Dynasties covers the Three Kingdoms to the fall of the Sui in 618, though with a more thematic approach rather than focussing on the chronological political history.
