The best primary information on this topic is usually found in aircraft handbooks and test-flight reports, providing you have a basic grasp of how to read and interpret these performance graphs. Additionally you'll run into the problem of different systems of measurement.

I've found the NACA online database useful from time to time:

Although obviously this would be mostly limited to allied aircraft.

Secondary literature wise I believe the book 'Fighter Aircraft Performance of WW2' (2016) by Erik Pilawskii comes closest to what you are after, with some luck he'll list his sources somewhere:
