To put it simply, in terms of countries there is not really any notable trend of them being named after people's surnames specifically - just look at the Philippines (King Philip II), Mauritius (Maurice of Nassau), Eswatini (Mswati II) as well as various countries named after Saints. There aren't any formal rules for the naming of countries, and so in a book called the Cosmographiae Introductio, which accompanied the first map to have the landmass labelled as America, the author states:

"I do not see what right any one would have to object to calling this part [the South American mainland, after Americus [the Latin of Amerigo] who discovered it and who is a man of intelligence, Amerigen, that is, the Land of Americus, or America: since both Europa and Asia got their names from women"
