Lately I've been reading up on the Byzantine history, however as a result, this triggered an interest in the persian empire. However I have been unsuccesfull in finding a proper book, which can enlighten me on their rich history. Hence my question, if someone can recommend a book in regards to their history.

There isn't a single "big book" on the Sasanians, unfortunately, but some that I would recommend are
Sasanian Persia by Touraj Daryaee
The Decline and Fall of the Sasanian Empire by Parvaneh Pourshariati
ReOrienting the Sasanians: East Iran in Late antiquity edited by Khododad Rezakhani
And if you get really into it maybe you can handle reading the extremely dry work
Arsacids and Sasanians: Political Culture in Post-Hellenistic and Late Antique Persia by M. Rahim Shayegan
