One pound of wheat is enough to bake 1.5 lbs of whole wheat bread. This provides a baseline of about 1200-1500 calories, which combined with seasonal vegetables and various proteins covers most of a person's basic nutritional needs. Assuming 5 people to a household, this is a consumption of about 18,000 lbs for a 90 day winter in a 40 household village. Ancient and medieval farming communities usually tried to have 12-18 months of food stored, since agriculture is unpredictable and it takes time to turn things around when they go wrong. For 200 people, this is about 35-50 tons.
