How would somebody find a list of the Pharaohs that are known by ancient inscriptions, monuments, tombs, pyramids etc.? In other words, which Pharaohs do we know about aside from written history (e.g. Herodotus, Manetho etc.)?

There are two excellent books with lists of attested Egyptian kings. The Great Name: Ancient Egyptian Royal Titulary by Ronald Leprohon includes the names of kings in transliteration and focuses on the most common forms of each royal name. Handbuch der ägyptischen Königsnamen by Jürgen von Beckerath includes hieroglyphic transcriptions as well as transliterations and provides the full set of variants for each royal name. It is much harder to find without access to a university library, however.
A list of Egyptian queens can be found in Ancient Egyptian Queens: A Hieroglyphic Dictionary by Wolfram Grajetzki.
For more detailed information about what we know about each king and queen, see Chronicle of the Pharaohs by Peter Clayton and Chronicle of the Queens of Egypt by Joyce Tyldesley.
