Modern Egypt has a mix of Arabs and Copts, Hellenistic Egypt had a mix of ethnic Egyptians and Greeks. What was ancient (pharaonic) Egypt like in terms of ethnicity/language? Would everyone in the country have spoken ancient Egyptian?

No - as was the case in many other Hellenistic societies, the urban areas would have had a Greek/Greek-origin townsfolk population that spoke Greek koine (a lingua franca dialect of Greek) and a substrata of lower classes speaking ancient Egyptian or other languages such as Aramaic, and a peasantry outside the cities that certainly spoke ancient Egyptian.
