What books, resources, etc should I start with?
My history education seemed to be entirely focused on political and social changes.
Well, one place to start is this subreddit's wiki page for recommended history books by subject, which includes a section on the history of science and technology. There are many recommendations there that one could imagine starting with, ranging from the more theoretical (Kuhn's Structure of Scientific Revolutions is a classic) to the very concrete (specific time periods, fields of science, etc.).
There are also textbooks by academic historians of science that are good for a broad overview. Peter Bowler's Making Modern Science, for example.
What I would avoid are overly popular versions of it. Avoid works written by scientists who have not trained in history. Avoid pro-science, rah-rah-rah sorts of things. They tend to peddle pretty error-filled versions of the history of science.
