Based on my few trips to rural Vietnam our tour guides mentioned how some families bred dogs for consumption. Since most of canines had to be big to serve in the US Army, were many of them eaten once the war ended?
As I wrote about here most Military Working Dogs with the US forces in Vietnam were either put down, or turned over to ARVN handlers. The numbers which were euthanized, versus those turned over are not well documented, as far as I have seen, so it is unclear what number met what fate. The specific claims about the dogs being eaten are unconfirmed rumors though. The only writings I have seen on the topic come from the suspicions of American handlers about their dogs after being turned over, and may very well reflect nothing more than racial stereotypes. It is possible that happened to some, but it is all unconfirmed, and there is no way to verify numbers in any meaningful way.
