It's hard to find something, honestly, that can comprehensively cover an intricate and complex conflict that has spanned (by some accounts) over 120 years when looking at the wider Zionist-Arab conflict (which naturally informs and is hard to distinguish from the Israeli-Arab conflict generally). The book list has some good recommendations on where to start on overview-style books.
