There is no one answer to this, as I discussed in my previous answer: How did so many European 'traditional/folk' costumes came to be, when in historical representations, essentially nobody ever dressed like that. The short version: people did dress like that, in the Early Modern period the peasantry typically wore folk dress that varied by region.

I don't quite understand the second part of your question - they wore the same clothes indoors and outdoors, occasionally with an overlayer for warmth when necessary.
