Basically everything we think we know about 'Norse mythology' comes from post-conversion Iceland. We have no contemporary records of doctrine, theology or practice from within Scandinavian paganism, and the archaeological record can only tell us so much about belief and pratice. /u/Steelcan909 goes into much better detail here.
