It would vary entirely based on the squadron in question, where they were based, the weather, enemy activity etc. One or two sorties in a day was common, three, four or very occasionally more possible during the heaviest fighting. Patrols would tend to be 60-90 minutes (neither Spitfire nor Hurricane had a large fuel capacity), scrambles to intercept enemy formations could be shorter. Fighter Command pilots usually had 48 hours of leave every two weeks, though again this could depend on specific circumstances.
