You may have seen this one in the booklist, but the best bang for your buck is probably Osman's Dream by Caroline Finkel. Finkel's work is a mammoth of a book, which covers the history of the Ottomans from their beginnings in the late 13th century to their end in the early 20th century.

I have leafed through this book countless times when answering questions, because it touches on an incredibly amount of topics in its nearly 700 pages. The only drawback is that it doesn't have much of a narrative and it can be a bit dry at times. Nonetheless, it is a great overview of the empire.

I would also recommend A History of the Ottoman Empire by Douglas A. Howard, which covers a similar timeframe. I've only read a bit of this one so far, but it looks promising and is a bit newer than Finkel's work. Howard's work is a bit more focused as it more looks at the social and religious history of the empire. While Howard's work is quite literally a textbook, it has better prose and is a bit more readable than Finkel's work.

If you're interested in perhaps a more niche topic, Alan Mikhail's Under Osman's Tree: The Ottoman Empire, Egypt, and Environmental History provides an environmental overview of the Ottoman empire, which is a wildly different way of looking at it than the other two books.

So, depending on what topics you are interested in, you may be more interested in one of these more than the others. Finkel's work is probably the best overview, but the others provide different and unique looks at the empire, that you won't really find in Osman's Dream.
