Also if anyone could answer these questions it would be much appreciated: Around how many crew mates where on each ship? How much on average where crew mates payed? How much cargo would a 1600 ton carrack carry? What was the effect of the different sail types?

In general price of ships fluctuated widely in time (even not counting for the general trend of enormous increase in prices in 16th century, so called Price Revolution), as for example average size of and depended on many factors like size of the ship, availability of wood etc. I give some examples in my posts, a long with answers to most of your other questions.
