We have a large body on Ancient Greek and Roman thought and philosophy, as well as their world view and values.

There's always more to be said on the topic, but I touched on this in What Should I Read to Get Inside the "Headspace" of Major Ancient Near Eastern Cultures?
Van de Mieroop's Philosophy before the Greeks: The Pursuit of Truth in Ancient Babylonia and Horowitz' Mesopotamian Cosmic Geography are also worth a read, and there's a few relevant chapters in the section on "Thought" in the new edition of A Companion to the Ancient Near East.
